3 Easy Homemade Vegan Pizza Recipes for Dinner

A few weeks ago Steve & I were trying to think of an easy dinner we could throw together that would feel like a treat. I love veggies, but it can be a challenge to find delicious, plant-based substitutes for old favorites like pizza and burgers. Normally on pizza night we make this Amy's pizza, but I was not in the mood for frozen pizza. Ordering out was not in the budget for the week, so making our own was the only option. Then I thought about how amazing a white pizza with broccoli would taste if we could somehow figure it out. Then Steve said hot sauce, because Buffalo Chicken pizza, and the following recipe was born. I have included a Chicken & Broccoli variation, a Buffalo Chicken variation & a Roasted Veggie Variation. We used two pizza crusts, making one half-broccoli/ half-buffalo and the second pizza all veggie. We had enough for lunch the next day.Note: we used 1/2 of a 16 oz. block of tofu for one pizza. You can use more or less based on preference.

Buffalo Chicken/Chicken Broccoli:

Ingredients:

1 pizza crust - we used Rustic Crust Organic Great Grains (they also have GF options)1/2 onion, chopped8 oz. tofu - press out water & cut into cubesolive oil or spray for panHot sauceMajestic Garlic Raw Vegan Garlic spread - y'all, this stuff is a gift from heaven above. Great for dipping with chips, carrots/cukes/pita chips, or on a tortilla as a base for quesadillas. We used it as our white pizza base.1 c. broccoli - you can use more or less depending on preference.

Instructions:

  1. In a pan saute half an onion in a little bit of olive oil until browned. Add tofu and broccoli and saute on medium heat until tofu is semi-firm and broccoli is a little tender. About 10 min.
  2. Spread majestic garlic dip onto pizza crust. I used about 4 tablespoons, but you can use more or less depending on your preference.
  3. Remove half of the tofu/broccoli mixture and place onto one side of pizza crust
  4. Add hot sauce to remaining half of tofu & broccoli, and saute for a few more minutes.
  5. Add the buffalo tofu & broccoli to the other half of the pizza crust.
  6. Bake according to crust directions (ours was 425 for 10-12 min)
  7. Let it cool a little before slicing & enjoy!

Roasted Veggie Pizza:

Ingredients:

1 pizza crust - we used Rustic Crust Organic Great Grains (they also have GF options)Chopped veggies- we used peppers, mushrooms, onions and garlicolive oil or spray for pan

  1. In a pan saute half an onion and garlic in a little bit of olive oil until browned. Add sliced veggies and saute on medium heat for about 5-10 min depending on how crunchy you like your veggies.
  2. Spread your favorite tomato sauce/paste/etc onto pizza crust and top with cooked veggies
  3. Bake according to crust directions (ours was 425 for 10-12 min)
  4. You can sprinkle it with Nutritional Yeast for added protein/cheesy flavor. This is the one we use, and the best, IMHO.

  This recipe is so easy, and literally takes less than 30 minutes to put together.
